Today's Kitchen
Forget prawns.
They may have appeared in today's excellent post from @jhbfoodiecyclist, but they aren't what this stage says to us.
This road deserves something rooted in the mountains.
For us that means Flammekueche.
Paper-thin dough.
Crème fraîche.
Onions.
Smoked bacon.
Cooked as hot and as fast as possible.
Simple ingredients.
Absolute precision.
Exactly the sort of cooking we admire.
Why this dish?
One of the joys of the Tour is discovering that every region has its own traditions.
Sometimes we'll take inspiration from brilliant cooks such as @jhbfoodiecyclist.
Sometimes we'll simply follow the landscape.
Our aim isn't to recreate recipes.
It's to celebrate the places the Tour passes through.
In the Workshop
Good leather behaves much like good cooking.
Start with proper ingredients.
Don't rush.
Finish everything by hand.
Pay attention to the details that nobody notices consciously...
...but everybody feels.
